ABSTRACT Collagenases are remarkably important in the biotechnological industry since they have a wide spectrum of applications, and though various natural enzymes purified from animal and plant sources have been studied, nowadays microorganisms have become one of the main sources of enzyme production, particularly filamentous fungi. This study aims at the production of collagenase by Aspergillus sclerotiorum, using the solid-state fermentation technique with coffee waste as a substrate. The results obtained demonstrate significant production of collagenase (679.44 U/ml), which was also found to have an alkaline optimum pH (8) and an optimum temperature at 45 °C. Thus, it is concluded that this microorganism has a reasonable biotechnological value when it comes to protease and collagenase production. These preliminary results are of great value, aiming its application.
