ABSTRACT In this work we identified natural essences extracted from olive leaves (Chemlali variety). Phenolic compounds were extracted using methanol/water as a solvent. The identification of flavonoids and phenolic monomers was carried out by diode array high performance liquid chromatography (HPLC), and liquid chromatography coupled with mass spectroscopy LC/MS. Fourteen compounds were identified through the LC/MS technique, and classified into four different families, namely flavonoids, secoiridoids, phenolic alcohols, and phenolic acids. This identification was based on the explanation of the various moieties found in the mass spectrum MS1 and MS2 unlike the previously published literature. Besides, we highlight the importance of olive leaves in traditional Mediterranean medical treatments.
