ABSTRACT Rice is the major food for about one-third of the earth`s population. One of the major problems in the rice industry is breakage of kernels during processing and handling. Breakage of rice grains during milling can be attributed to the presence of fissures. Broken kernels are essentially a loss because they have a lower market value than head rice. It is known that the fissuring usually does not take place during drying, but during the equilibration of the moisture distribution after rapid drying. The adsorption of moisture alone in dried rice grains may also lead to fissures. Moisture adsorption and desorption induce complicated stress patterns in rice kernels due to expansion and contraction. The resulting stresses may cause fissures in rice kernels when the hydro stresses exceed the failure strength of the grains. An extensive review of research related to rice fissures from moisture adsorption and desorption is presented. Future work for these subjects is suggested.
