ABSTRACT

Purification of polysaccharide fraction coming from products and by-products of tomato industry (Lycopersicon esculentum) and its chemical composition, rheological properties and partial primary structure on the basis of spectroscopic analyses (UV, IR,  1H NMR) were reported. We have  investigated the effect of the polysaccharide on nitrite and ROS production in LPS-stimulated J774 macrophages for 24 h. Results showed that polysaccharide inhibits NF-κB activation and iNOS gene expression by preventing the reactive species production, and suggest for this compound a role for controlling oxidative stress and/or inflammation. The achievement of biodegradable and thermoplastic materials by using chemical process from polysaccharides was reported. The realization of manufactured articles, for example flowerpots or rigid packing vases, film for agriculture use and ensiling film were studied. In collaboration with M.F.M. International of Torre del Greco we studied nutritional quality of some hybrids of Lycopersicon esculentum. All samples were cultivated in an experimental field in outdoor with different pedoclimatic conditions. The antioxidative activities of hybrids acetonic extracts were determined. The acetonic antioxidant activity was performed by DPPH method and, on these fractions, total polyphenolic content was evaluated by Folin-Ciocalteau assay.
