ABSTRACT
 
A simple, accurate, and quantitative analysis method based on NIR absorption spectroscopy and multivariate analysis methods, partial least square (PLS) and principal components analysis (PCA), for determination of different levels of ethanol content in alcoholic beverages and classification of organoleptic properties has been developed. It can be used as a standard method for quality control of beverage manufacturers of mezcals in the central region of México.
