ABSTRACT

Aflatoxins are secondary metabolites of mould Aspergillus flavus and Aspergillus parasiticus. They are found to contaminate a wide variety of important agricultural products especially groundnuts and groundnut products. The problem of contamination of groundnuts with aflatoxins is of current concern in tropical and subtropical countries where conditions are optimum for growth of toxigenic moulds and for production of aflatoxins. Removal or inactivation of aflatoxin in groundnuts and groundnut products is a major global concern. This article reviews some aspects of aflatoxins concerning their occurrence in groundnuts and groundnut products, and detoxification by chemical, biological and physical methods.
